Hot Tomato Poppin’ Penne
1 pound HOT turkey or pork sausage
1 poblano pepper
1 box grape tomatoes
1 bag fresh spinach
splash of milk or half-and-half
1/2 cup parmesan cheese
1 lb penne, cooked according to the instructions.
1. Cook penne according to the instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
2. While pasta is cooking, brown sausage in large skillet. Add chopped poblano and cook until sausage is cooked through and poblano is tender. Drain.
3. Add tomatoes and shake skillet until the tomatoes pop.
4. Wilt in spinach.
5. Stir in pasta water, half-and-half and parmesan.
6. Toss with pasta.
