What’s for Dinner Wednesday: Hot Tomato Poppin’ Penne

This is one my husband’s (okay, and my) favorites. It’s sooo yummy and spicy and creamy and kinda sorta healthy. Enjoy.

Hot Tomato Poppin’ Penne
1 pound HOT turkey or pork sausage
1 poblano pepper
1 box grape tomatoes
1 bag fresh spinach
splash of milk or half-and-half
1/2 cup parmesan cheese
1 lb penne, cooked according to the instructions.

1. Cook penne according to the instructions. Reserve 1/2 cup of pasta water, then drain and set aside.

2. While pasta is cooking, brown sausage in large skillet. Add chopped poblano and cook until sausage is cooked through and poblano is tender. Drain.

3. Add tomatoes and shake skillet until the tomatoes pop.

4. Wilt in spinach.

5. Stir in pasta water, half-and-half and parmesan.

6. Toss with pasta.

  1. Please. Please. Can. I. Come. Eat. Dinner?

  2. So the first time I read through this, I read "grapes" instead of "grape tomatoes" and was like, "Hmmmm, grapes in a pasta dish – this sounds interesting!" :)

Looks good, though, seriously. I may have to try it!

  3. Something even a man could make? I look for recipes to impress my wife!

  4. Also, I have a book contest going on right now on Family Fountain.

  5. My stomach is growling reading this recipe. Yummy!!!
